If we're serious about local food, we need local slaughterhouses

Unless we all go vegetarian overnight (unlikely), we need to build local infrastructure to meet the needs of meat eaters. That's the majority of people in the Piedmont Triad. To survive and thrive, small local producers of poultry, pork, and beef need nearby slaughterhouses that operate on sanitary and humane principles.
